Preheat your oven to 350°F (175°C) while you prepare your cookie dough.
In a medium mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Then, mix in the egg and maple syrup until combined.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Using a tablespoon or cookie scoop, drop tablespoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each one to allow for spreading.
Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
