1 lb ground turkey
4 cups chicken broth
2 cups mixed vegetables (carrots, celery, bell peppers)
1 onion, chopped
2 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
1 tbsp olive oil
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic. Sauté until translucent, about 3-5 minutes.
Increase heat to medium-high and add the ground turkey. Cook until browned, breaking it apart as it cooks.
Stir in the mixed vegetables and cook for another 5 minutes.
Pour in the chicken broth and bring to a boil.
Add thyme, salt, and pepper to taste. Simmer on low for 15-20 minutes.
Taste and adjust seasoning if necessary. Optional: add fresh herbs just before serving.
Ladle soup into bowls and serve with crusty bread or crackers.
