2 eggs
1 cup of mixed vegetables (peas, carrots, bell peppers)
3 tablespoons of soy sauce
2 tablespoons of vegetable oil

Prepare the Rice: If using fresh rice, cook it and let it cool before making fried rice. Ideally, use rice that has been cooked and refrigerated overnight.
Heat the Pan: In a large skillet or wok, heat the vegetable oil over high heat until shimmering.
