  • Prepare the Rice: If using fresh rice, cook it and let it cool before making fried rice. Ideally, use rice that has been cooked and refrigerated overnight.
  • Heat the Pan: In a large skillet or wok, heat the vegetable oil over high heat until shimmering.
  • Scramble the Eggs: Crack the eggs into the pan and scramble them until just set. Remove them from the pan and set aside.
  • Add Vegetables: In the same pan, add a little more oil if necessary and toss in your mixed vegetables. Sauté for about 2-3 minutes until they are tender.
