Easy Chicken Pot Pie

A comforting and delicious chicken pot pie that is quick and easy to prepare, perfect for busy weeknights.

  • 1 frozen pie crust shell
  • 1 sheet frozen pie crust (thawed and rolled out)
  • 2 cups shredded rotisserie chicken
  • 1/2 package frozen peas and carrots
  • 1 can cream of chicken or mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar or colby jack cheese
  • Onion powder, salt & pepper (to taste)
  • 12 fresh green onions (optional, can save some for topping)
  • Milk or egg wash (optional)

Instructions

  1. In a large bowl, combine the shredded chicken, frozen peas and carrots, cream of chicken (or mushroom) soup, milk, shredded cheese, green onions, and seasonings. Stir well to mix everything.
  2. Pour the mixture into the frozen pie shell. Roll out the thawed pie crust sheet and cut it into shapes or strips. You can create a lattice design or simply lay shapes on top of the filling.
  3. Brush the top with milk or egg wash, if desired.
  4. Place the pie on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 35 minutes, or until the crust is golden brown.
  5. Let it cool slightly and serve hot with extra cheese and chopped green onions if desired.

Notes

Use rotisserie chicken to save time and add flavor. Customize vegetables as you prefer.
