1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs
2 tsp baking powder
1 tsp vanilla extract
½ cup milk (or dairy-free alternative)
Spices (cinnamon, ginger, cardamom, clove)
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, ensuring they are fully incorporated before adding the next.
Stir in the vanilla extract to the mixture.
In another bowl, combine the flour, baking powder, and all the spices. Whisk well.
Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix just until combined; be careful not to overmix.
Pour the batter into the prepared cake pan, smoothing the top with a spatula.
Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center.
Once done, let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
