1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 cup pumpkin puree
2 large eggs
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
Preheat the oven to 350°F (175°C).
Grease a donut pan with cooking spray or non-stick butter.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and pumpkin pie spice until well combined.
In a separate bowl, mix the pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients, folding gently until just combined. Don’t over-mix!
Spoon the batter into the prepared donut molds, filling each cavity about 2/3 full.
Place the donut pan in the preheated oven and bake for 12-15 minutes or until a toothpick comes out clean.
Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Once completely cool, optionally glaze or coat with powdered sugar.
