Eggless Goan Mawa Cake

  • 100 g Unsalted Butter
  • 200 g Mawa
  • 1 cup Milk
  • 1 cup Curd
  • 1 tsp Cardamom Powder
  • 240 g All-Purpose Flour
  • 50 g Corn Flour
  • 150 g Powdered Sugar
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 50 g Cashew Nuts
  • 50 g Slivered Almonds

Instructions

  1. Preheat your oven to 180°C (350°F) and grease an 8-inch round cake tin.
  2. Cream the unsalted butter until smooth, then mix in the mawa, milk, and curd until well combined.
  3. Sift together the all-purpose flour, corn flour, baking powder, baking soda, cardamom powder, and powdered sugar in a separate bowl.
  4. Slowly mix the dry ingredients into the wet mixture until just combined.
  5. Fold in the cashew nuts and slivered almonds.
  6. Transfer the batter to the prepared cake tin and bake for 35 to 40 minutes.
  7. Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For an extra touch, dust with powdered sugar before serving. Store covered at room temperature for 3-5 days or in the fridge for up to a week.
