Delicious Curry Chicken Salad with Grapes

A flavorful and versatile curry chicken salad featuring tender chicken, sweet grapes, and crunchy almonds, perfect for lunches, picnics, or meal prep.

  • 2 cups Cooked Chicken Breasts (use rotisserie chicken)
  • 1 cup Red Grapes (can substitute with green grapes)
  • 1/2 cup Sliced Almonds (can substitute with cashews or walnuts)
  • 1 cup Celery (chopped)
  • 1/4 cup Green Onions (chopped)
  • 1 medium Granny Smith Apple (chopped)
  • 1/2 cup Mayonnaise (can replace with Greek yogurt)
  • 1/4 cup Sour Cream (can substitute with Greek yogurt)
  • 1 tablespoon Curry Powder (adjust to taste)
  • 1 teaspoon Turmeric
  • 1 teaspoon Ground Ginger (can use fresh ginger)
  • 1/2 teaspoon Salt (adjust to taste)

Instructions

  1. Shred the chicken into bite-sized pieces.
  2. Rinse and pat dry the grapes, cutting them in half if large.
  3. Chop the celery, green onions, and Granny Smith apple finely.
  4. In a large mixing bowl, combine chicken, grapes, celery, green onions, and apple.
  5. In another bowl, mix mayonnaise, sour cream, curry powder, turmeric, ground ginger, and salt. Adjust spices to taste.
  6. Pour the dressing over the chicken mixture and mix gently to coat.
  7. Fold in the sliced almonds.
  8. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve on greens, in sandwiches, or stuffed in avocados. Store in an airtight container in the fridge for up to 4 days.
