6 large Flour Tortillas
1 tablespoon Light Brown Sugar
1 cup Vegetable Oil
2 cups Fresh Blueberries
1/2 cup Granulated Sugar
1/2 cup Water
2 tablespoons Lemon Juice
1 teaspoon Lemon Zest
1 tablespoon Cornstarch
1 cup Heavy Whipping Cream
8 oz Cream Cheese
1/2 cup Powdered Sugar
Instructions
Make the Blueberry Sauce: In a medium saucepan, combine blueberries, granulated sugar, water, lemon juice, lemon zest, and cornstarch. Cook over medium heat for 5-7 minutes until thickened, then cool.
Prepare the Tortillas: Heat vegetable oil in a large frying pan. Sprinkle brown sugar on both sides of the tortillas and fry for 30 seconds on each side until golden brown. Drain on paper towels.
Make the Cheesecake Filling: Beat cream cheese until smooth, gradually adding powdered sugar. In another bowl, whip heavy cream to stiff peaks and fold into the cream cheese mixture.
Assemble the Tacos: Fill each fried tortilla with cheesecake filling, then top with blueberry sauce and extra fresh blueberries, if desired.
