1 pie crust (store-bought or homemade)
4 large apples (mixed varieties)
1 cup toffee bits
¾ cup granulated sugar
2 tablespoons flour
2 teaspoons cinnamon
¼ teaspoon salt
2 tablespoons butter (for the filling)
1 cup milk
3 egg yolks
½ cup sugar (for custard)
1 teaspoon vanilla extract
Step 1: Preheat your oven to 375°F (190°C). If using a store-bought crust, follow the package instructions for pre-baking.
Step 2: In a large bowl, peel and slice your apples. Add the granulated sugar, flour, cinnamon, and salt. Gently toss to coat the apples evenly.
Step 3: Sprinkle the toffee bits over the coated apples and mix delicately to combine.
Step 4: Pour the apple mixture into your prepared pie crust, ensuring it’s evenly distributed across the pie dish.
Step 5: Bake the pie for 45-50 minutes, or until the apples are tender and the crust is golden brown.
Step 6: While the pie is baking, prepare the homemade vanilla custard. Heat the milk over low heat until warm.
Step 7: In a separate bowl, whisk together the sugar and egg yolks until pale and smooth. Gradually add the warm milk while whisking.
Step 8: Return the mixture to the saucepan and cook over medium heat until it thickens, about 5-7 minutes.
Step 9: Stir in the vanilla extract and let cool slightly.
Step 10: Once the pie is cool, serve it with the homemade custard.
