2 cups all-purpose flour

1 cup pumpkin puree
1 cup granulated sugar
8 oz cream cheese
2 large eggs
1 tsp pumpkin spice
1 tsp vanilla extract

In a large mixing bowl, combine the flour, baking powder, sugar, pumpkin spice, and salt. Mix well.
In another bowl, beat the cream cheese until smooth. Add the pumpkin puree, eggs, and vanilla extract, mixing until fully combined.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; a few lumps are okay.
In a deep pot or fryer, heat oil to 350°F (175°C). Use a thermometer for accuracy.
Using a doughnut cutter or a round cutter, form doughnuts from the batter. Gently place them in the hot oil, taking care not to overcrowd the pot. Fry for about 3-4 minutes on each side until golden brown.
Remove the doughnuts and place them on paper towels to drain excess oil. Let them cool slightly.
For an extra touch, whisk together some powdered sugar and a splash of milk for a glaze or roll the doughnuts in cinnamon sugar while they are still warm.
