6 oz semisweet or bittersweet chocolate
2 cups heavy cream, divided
2 tsp instant espresso
3 large egg whites
1/4 tsp kosher salt
1/8 tsp cream of tartar
3 Tbsp granulated sugar, divided
Instructions
Melt the chocolate by chopping it into small pieces and placing it in a heatproof bowl. Melt using a double boiler or microwave in 30-second intervals, stirring until fully melted. Stir in the instant espresso and set aside to cool slightly.
In a large mixing bowl, whip 1 cup of heavy cream to medium peaks. Gently fold the whipped cream into the cooled chocolate mixture.
In another bowl, whisk the egg whites with cream of tartar on medium speed. Gradually add 1 Tbsp of sugar at a time until reaching stiff peaks.
Carefully fold the egg whites into the chocolate and cream mixture in two or three additions until well combined.
Evenly distribute the mousse into serving dishes, cover with plastic wrap, and refrigerate for at least 2 hours to set.
Serve and enjoy with optional garnishes like whipped cream, fresh fruit, or mint leaves.
