Crockpot Queso Chicken Quesadillas

Delicious and cheesy quesadillas filled with slow-cooked chicken and queso, perfect for busy days and customizable for everyone’s taste.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 oz packet taco seasoning
  • ½ cup salsa
  • 1 cup queso
  • 6 large flour tortillas
  • 12 oz Mexican shredded cheese blend

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour salsa over the chicken.
  4. Cover and cook on low for 4 to 6 hours.
  5. Shred chicken using two forks once fully cooked.
  6. Add queso to the shredded chicken and mix well.
  7. Spread chicken mixture onto half of each tortilla.
  8. Sprinkle Mexican shredded cheese blend over the chicken mixture.
  9. Fold tortillas in half to form quesadillas.
  10. Preheat a skillet over medium-high heat and cook quesadillas for 3 minutes on each side or until golden brown and cheese is melted.
  11. Cut quesadillas into triangles and serve warm with toppings.
