Ingredients

Scale
  • 1 lb boneless chicken breasts
  • 2 cups chicken broth
  • 2 cups frozen gnocchi
  • 1 cup fresh spinach
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Instructions

  • Prepare the Chicken: Place the boneless chicken breasts in the bottom of the crockpot. If using frozen chicken, no need to thaw—it will cook perfectly during the slow cooking process.
  • Add the Broth: Pour in the chicken broth, ensuring that the chicken is fully submerged. This helps retain moisture during cooking.
  • Add the Vegetables: Layer in your diced carrots, celery, and spinach. You can also add any other veggies you like at this stage.
  • Season It Up: Sprinkle in the garlic powder, along with salt and pepper to taste.
  • Cook: Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  • Add Gnocchi: About 30 minutes before you’re ready to serve, stir in the gnocchi.
  • Finish with Cream: At the same time, pour in the heavy cream.
  • Shred the Chicken: Just before serving, shred the chicken right in the crockpot using two forks.
  • Garnish and Serve: Ladle the delicious soup into bowls and garnish with fresh herbs or a sprinkle of cheese.
