Crockpot Caramelized Butternut Squash and Apples

A comforting dish combining the sweet flavors of apples and the nutty taste of butternut squash, perfect for fall and easy to make in a crockpot.

  • 1 butternut squash, peeled and diced
  • 3 apples, cored and sliced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons butter
  • Salt to taste

Instructions

  1. Prepare the butternut squash and apples by peeling the squash, cutting it in half, scooping out the seeds, and dicing it into small chunks. Core and slice the apples.
  2. Place the diced butternut squash and sliced apples into the crockpot, spreading them evenly.
  3. In a small mixing bowl, combine the brown sugar, cinnamon, and a pinch of salt.
  4. Sprinkle the brown sugar mixture over the squash and apples in the crockpot.
  5. Dot the top with small pieces of butter.
  6. Cook on low for 4-5 hours until the squash is soft and mashable.
  7. Stir before serving to combine the flavors.

Notes

For variations, consider adding pears or nuts for crunch. Can be made vegan by substituting butter with coconut oil.
