Crispy Smashed Carrot Bites

A delicious and healthy snack made from smashed and baked carrots that are crispy on the outside and tender on the inside.

  • 2 cups Carrots, sliced into 1-inch rounds
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash, peel, and slice the carrots into thick rounds.
  3. Boil the carrot rounds in water for about 10 minutes until slightly tender.
  4. Drain the carrots and ensure they are well-drained.
  5. Line a baking sheet with parchment paper and place the drained carrots in a single layer.
  6. Gently smash each carrot round with a masher or fork.
  7. Drizzle olive oil over the smashed carrots and season with salt, pepper, garlic powder, and paprika.
  8. Bake for 20-25 minutes until crispy and slightly caramelized.
  9. If using, sprinkle Parmesan cheese over the carrots during the last 5 minutes of baking.
  10. Remove from the oven, let cool for a few minutes, and serve warm.

Notes

Pairs well with dips like hummus or ranch dressing. Customize seasonings based on taste preferences.
