  • 7 medium to large Potatoes (Yukon Gold or Russet)
  • 2 medium Onions (finely chopped)
  • 7 large Eggs (at room temperature)
  • 3/4 cup Vegetable Oil (reserve 2 tbsp for baking dish)
  • 3 tsp Salt
  • 1 pinch Ground Black Pepper
  • Shredded Cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and add 2 tbsp vegetable oil to a 9×13-inch baking dish, placing it in the oven to heat.
  2. Peel, rinse, and shred the potatoes; squeeze out excess liquid using a kitchen towel.
  3. Chop the onions finely.
  4. In a mixing bowl, whisk the eggs until light and frothy, then combine with the potatoes, onions, salt, black pepper, and remaining oil.
  5. Carefully pour the potato mixture into the hot baking dish.
  6. Bake for 45 to 60 minutes, or until the top is golden brown and crispy.
  7. If using cheese, sprinkle on top during the last 10 minutes of baking.
  8. Let cool for 10 minutes before serving.

Notes

Serve with sour cream or applesauce for a classic touch. It can also be enjoyed alongside roasted meats or for breakfast.
