1 medium Onion (finely diced)
2 cloves Garlic (minced)
1 tbsp Chili Powder (adjust based on spice tolerance)
1 tsp Ground Cumin
1 tsp Smoked Paprika (or regular paprika)
1 tsp Dried Oregano (optional)
Salt, to taste
Black Pepper, to taste
1 cup Tomato Sauce or Salsa (choose your favorite)
1 cup Shredded Cheese (Cheddar, Monterey Jack, or Mexican Blend)
12 Corn Tortillas
Vegetable Oil (or cooking spray for baking/air frying)
Guacamole (for dipping)

Instructions
Heat a large skillet over medium heat. Add the ground beef and break it apart as it cooks.
Add diced onion and minced garlic. Cook for about 5 minutes until onion is soft.
Add chili powder, ground cumin, smoked paprika, oregano, salt, and black pepper. Stir to combine.
Pour in tomato sauce or salsa, mix thoroughly, and simmer for about 5 minutes on low heat. Remove from heat and stir in shredded cheese until melted.
Heat corn tortillas in a dry skillet for 30 seconds on each side or microwave with a damp cloth for 15-20 seconds until soft.
Place a spoonful of beef filling on one edge of a tortilla, roll tightly, and place seam-side down on a plate. Repeat for remaining tortillas.
For frying, heat vegetable oil in a deep skillet over medium heat. Fry taquitos for 3-4 minutes on each side until golden brown. For baking, preheat oven to 425°F (220°C) and bake for 15-20 minutes until crispy.
Let fried taquitos drain on paper towels. Serve hot with guacamole, sour cream, and salsa.
Notes
For a healthier option, bake instead of frying. Keep tortillas warm in a towel to prevent cracking.
