Crispy Air Fryer Hanukkah Latkes

Delightful, healthier air fryer latkes that capture the essence of traditional Hanukkah celebrations.

  • 4 medium Russet potatoes (peeled and grated)
  • 0.5 medium Yellow onion (peeled and grated)
  • 2 large eggs
  • 0.25 cup Matzo meal (or breadcrumbs)
  • 2 teaspoons Kosher salt (adjust based on preference)
  • 0.5 teaspoon Freshly ground black pepper
  • as needed spray Cooking spray (for air fryer)
  • 1 cup Sour cream (or Greek yogurt)
  • 1 cup Applesauce (homemade is best)

Instructions

  1. Prepare the potatoes by peeling and grating them. Place in a large bowl.
  2. Remove excess water from grated potatoes using a kitchen towel or cheese cloth.
  3. Grate the yellow onion and add it to the bowl with the potatoes.
  4. Add eggs, Matzo meal, salt, and black pepper to the bowl and mix well.
  5. Preheat the air fryer to 375°F (190°C).
  6. Form the potato mixture into patties about 1/2 inch thick.
  7. Spray the air fryer basket with cooking spray.
  8. Arrange the patties in a single layer in the air fryer, lightly spraying the tops as well.
  9. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve warm with sour cream and applesauce on the side.

Notes

For a fun twist, consider toppings like chives or smoked salmon. Create a latke bar where guests can personalize their plates.
