1 lb Italian sausage
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
3 medium potatoes, diced
2 cups kale, chopped
1 cup heavy cream
Salt and pepper to taste
In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon (about 5-7 minutes).
Add the diced onion and sauté until it becomes translucent (about 3-4 minutes). Mix in the minced garlic and cook for an additional minute until fragrant.
