Creamy Taco Soup is a warm, comforting dish perfect for any day of the week, combining classic taco flavors with creamy richness for a hearty meal.

  • 1 pound ground beef (85/15)
  • 12 packages taco seasoning (depending on desired spice level)
  • 1 small yellow onion, diced
  • 3 teaspoons garlic, minced
  • 1 jalapeño, minced
  • 1 Anaheim pepper, minced
  • 15 oz can black beans, drained and rinsed
  • 15 oz can diced tomatoes with green chiles
  • 15 oz can corn, drained
  • 4 cups chicken broth
  • Zest of 1 lime
  • Juice of 1/2 lime (adjust as desired)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano leaves
  • 48 oz cream cheese, softened

Instructions

  1. Heat a large Dutch oven over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess grease.
  2. Stir in the diced onion and minced garlic. Cook for about 2-3 minutes until the onion softens and becomes translucent.
  3. Toss in the minced jalapeño and Anaheim pepper. Add one package of taco seasoning and cook for another 2 minutes.
  4. Pour in the black beans, diced tomatoes, and corn. Add chicken broth, lime zest, lime juice, salt, pepper, and oregano. Stir well to combine.
  5. Taste the soup and adjust seasoning as desired.
  6. Add softened cream cheese and stir over medium heat until melted and integrated.
  7. Cover and let the soup simmer for 10 minutes.
  8. Serve hot with desired toppings.
