Creamy Summer Squash Casserole

A delicious and easy summer casserole featuring fresh summer squash, cheesy goodness, and a crunchy topping.

  • 2 medium summer squash, sliced
  • 1 medium onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup sour cream
  • 1 cup breadcrumbs
  • 1/4 cup butter, melted
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat oil over medium heat and sauté the chopped onions and sliced summer squash until soft and translucent, about 5-7 minutes.
  3. In a bowl, mix the sautéed squash and onions with cheese, sour cream, garlic powder, salt, and pepper.
  4. Transfer the mixture to a greased baking dish, spreading it evenly.
  5. In a separate bowl, combine breadcrumbs with melted butter and mix until coated.
  6. Sprinkle the breadcrumb mixture evenly over the casserole.
  7. Bake in the preheated oven for 30-35 minutes until golden brown and bubbly.
  8. Let cool slightly before serving.
