Italian sausage, sweet or spicy (or turkey/plant-based sausage)
Carrots, celery, onion (or zucchini, bell peppers, spinach)
Chicken or vegetable broth (or bone broth, water with seasoning)
Heavy cream (or coconut milk, low-fat milk)
Italian seasoning, salt, pepper (or herbs de Provence, smoked paprika)
Brown the sausage in a large pot over medium heat, breaking it into smaller pieces.
Add chopped onions, carrots, and celery, cooking until onions are translucent.
Stir in Italian seasoning, salt, and pepper.
Pour in the broth and bring to a simmer for about 15 minutes.
Lower the heat and slowly stir in the cream, heating through.
Serve hot, garnished with fresh herbs or croutons.
