Creamy Potato Hamburger Soup

A hearty and comforting soup made with ground beef, potatoes, and a creamy base, perfect for any day.

  • 4 slices Bacon
  • 1 lb Ground Beef
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Carrot
  • 2 stalks Celery
  • 3 medium Potatoes
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Basil
  • 1/4 cup All-Purpose Flour
  • 4 cups Chicken Broth
  • 1 cup Whole Milk
  • 1 cup Cheddar Cheese

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crisp, about 5-7 minutes. Drain excess grease and set aside.
  2. Add the ground beef to the pot and cook until brown, roughly 5-6 minutes. Remove and set aside.
  3. Sauté the chopped onion, minced garlic, diced carrot, chopped celery, and cubed potatoes in the bacon grease until onions are soft, about 5 minutes.
  4. Stir in salt, black pepper, and dried basil; cook for about 2 minutes.
  5. Sprinkle in all-purpose flour and stir continuously for 2 minutes to create a roux.
  6. Gradually whisk in chicken broth and bring to a simmer. Let simmer for 20 minutes.
  7. Stir in reserved bacon and ground beef, add whole milk, and simmer for another 10-15 minutes.
  8. Add shredded cheddar cheese just before serving and stir until melted.

Notes

Serve with toppings like extra cheese, bacon bits, or fresh herbs. Pair with crusty bread or a green salad.
