1 lb butternut squash, peeled and cubed
2 cups all-purpose flour
1 egg
Salt and pepper to taste
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup unsalted butter
1 lb Italian sausage, casings removed
1 onion, finely chopped
1 tablespoon olive oil
1/2 teaspoon red pepper flakes
Instructions
Boil the cubed butternut squash until soft (15-20 minutes). Drain and let cool, then mash into a puree.
Mix the squash puree with egg, flour, and salt/pepper until a soft dough forms. Roll into ropes and cut into bite-sized pieces.
Bring salted water to a boil and cook the gnocchi until they float (2-3 minutes). Drain and set aside.
Melt butter over medium heat, add minced garlic and sauté for 1 minute. Then add heavy cream and simmer gently. Stir in Parmesan until melted and sauce thickens; season to taste.
Heat olive oil, cook chopped onion until translucent (about 5 minutes), then crumble in the sausage and brown it. Add minced garlic and red pepper flakes; cook for another 2-3 minutes.
Toss the cooked gnocchi with the creamy sauce, then add the sausage mix, and gently combine.
Serve immediately, garnishing with extra Parmesan or fresh herbs if desired.

This dish can be made ahead and stored in the fridge for up to 3 days. It pairs well with a light salad or garlic bread.
