Cranberry Apple Twice-Baked Sweet Potatoes

A delightful blend of sweet and tart flavors, these twice-baked sweet potatoes are perfect for any occasion, using seasonal ingredients for a comforting yet refreshing taste.

  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (Granny Smith or Honeycrisp), chopped
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke several holes in each with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, until tender.
  4. Once baked, let them cool for a few minutes, then cut in half lengthwise and scoop out the flesh into a bowl.
  5. Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt to the sweet potato flesh, mixing until creamy.
  6. Spoon the mixture back into the sweet potato skins.
  7. Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, until heated through and slightly caramelized.
  8. Let cool slightly before serving.

Notes

For added flavor, consider adding chopped nuts or a splash of maple syrup. Adjust the sweetness by modifying the amount of brown sugar used.
