Cozy Turkey Noodle Soup

A comforting and hearty turkey noodle soup perfect for chilly days.

  • 1 stick Butter (unsalted)
  • 1 cup Shredded Carrot
  • 1 rib Celery
  • 1/4 cup All-Purpose Flour
  • 4 cups Chicken Broth
  • 1 cup Half-and-Half Cream
  • 1 cup 2% Milk
  • 8 oz Kluski or Egg Noodles
  • 3 cups Cubed Cooked Turkey
  • 1 cup Shredded Cheddar Cheese
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Melt the stick of butter in a large pot over medium heat.
  2. Add shredded carrots and celery; sauté for about 5 minutes.
  3. Sprinkle in the flour and stir for about 2 minutes to create a roux.
  4. Gradually whisk in the chicken broth, then bring to a simmer.
  5. Reduce heat to low and stir in the half-and-half and milk.
  6. Add the noodles and cook according to package instructions.
  7. Fold in the cubed turkey and stir until heated through.
  8. Add cheddar cheese, salt, and pepper; stir until cheese is melted.
  9. Serve hot in bowls.

Notes
