1 lb boneless, skinless chicken thighs
1 cup wild rice
2 medium carrots, diced
2 celery stalks, diced
1 medium onion, chopped
4 cups chicken broth
1 cup heavy cream or coconut milk
2 tbsp olive oil
Salt and pepper to taste
Start by heating the olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
Stir in the wild rice, making sure it gets a bit of oil and toasts slightly for extra flavor. Cook for an additional minute.
Add the chicken thighs to the pot along with the chicken broth. Bring everything to a boil, then reduce the heat to a simmer. Cover the pot and allow it to cook for about 45 minutes until the chicken is cooked through and the rice is tender.
Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup.
Pour in the heavy cream (or coconut milk) and stir to combine. Simmer for another 5-10 minutes to allow the flavors to meld together beautifully. Taste and add salt and pepper to your preference.
