Cowboy Cornbread Casserole

A hearty, one-pan meal combining the flavors of the South and Tex-Mex cuisine, perfect for potlucks and gatherings.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup cornbread mix
  • 1 cup milk
  • 1 egg
  • 1 cup shredded cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat for about 6 to 8 minutes, and drain any excess grease.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for about 5 minutes.
  4. In a separate bowl, mix the cornbread mix, milk, and egg until smooth.
  5. Spread the beef mixture into a greased baking dish and pour the cornbread batter over it.
  6. Sprinkle the top with shredded cheese.
  7. Bake for 25-30 minutes until the cornbread is golden and cooked through.
  8. Let cool for a few minutes before serving.

Notes

For a vegetarian option, substitute ground beef with beans or additional vegetables.
