Cowboy Cornbread Casserole

A robust and flavorful dish that brings the spirit of the American West to your dinner table, packed with protein and fiber in one satisfying casserole.

  • 1 lb ground beef
  • 1 cup chopped onions
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs
  • 1 package cornbread mix
  • 1 cup shredded cheese (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook ground beef and onions over medium heat until browned, draining excess fat.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning; mix well and remove from heat.
  4. In a separate bowl, combine cornbread mix, milk, and eggs until smooth.
  5. In a greased baking dish, spread meat mixture evenly followed by pouring the cornbread batter over the top.
  6. Sprinkle shredded cheese on top of the cornbread batter.
  7. Bake for 25-30 minutes until golden brown and cooked through.
  8. Let the casserole cool for a few minutes before slicing and serving.

Notes

For variation, add different vegetables or try different cheeses. This dish is also great as a vegetarian option by swapping the meat for additional beans.
