Cowboy Cornbread Casserole

A hearty and comforting casserole combining ground beef, beans, corn, and a fluffy cornbread layer.

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ cup melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a 9×13 inch baking dish with butter or non-stick spray.
  3. In a skillet over medium heat, add the ground beef and cook until fully browned, about 7-10 minutes, draining excess fat.
  4. Stir in the black beans, corn, diced tomatoes, and taco seasoning, and let it cook for another 5 minutes.
  5. Pour the beef mixture into the greased baking dish.
  6. In a separate bowl, whisk together the milk, eggs, cornmeal, baking powder, salt, and melted butter until smooth.
  7. Pour the cornbread batter over the beef mixture.
  8. Sprinkle the shredded cheddar cheese on top.
  9. Bake for 25-30 minutes until the cornbread is golden brown and a toothpick comes out clean.
  10. Allow to cool for a few minutes before slicing and serving.

Notes

Season to taste and feel free to customize with your favorite veggies or spices.
