Cowboy Cornbread Casserole

A hearty and comforting casserole made with ground beef, black beans, corn, and topped with fluffy cornbread.

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (12 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 box cornbread mix
  • 1 egg
  • 1 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is brown and the onions are soft, about 5-7 minutes.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for an additional 5 minutes.
  4. Layer the beef mixture evenly in a greased casserole dish.
  5. In a separate bowl, prepare the cornbread mix by adding an egg and milk as per package instructions. Mix gently.
  6. Pour the cornbread batter over the beef mixture, covering it evenly.
  7. Sprinkle shredded cheese on top of the cornbread batter.
  8. Bake for 25-30 minutes until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
  9. Let the casserole cool for a few minutes before serving.

Notes

Feel free to add extra vegetables such as bell peppers or zucchini for added nutrition.
