  • 1/2 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together softened butter and sugar until light and fluffy (3-5 minutes).
  3. Beat in the egg and vanilla extract until well mixed.
  4. In a separate bowl, mix cornmeal, all-purpose flour, baking powder, and salt.
  5. Gradually combine the dry ingredients with the wet ingredients until well mixed.
  6. Line a baking sheet with parchment paper.
  7. Drop spoonfuls of dough onto the baking sheet with space between each.
  8. Bake for 12-15 minutes until edges are lightly golden.
  9. Let cookies cool on the baking sheet briefly, then transfer to a wire rack to cool completely.
