Chocolate Cupcakes

Decadent chocolate cupcakes topped with creamy chocolate frosting and mini marshmallows, perfect for any occasion.

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup boiling water
  • Mini marshmallows (for topping)
  • Chocolate frosting (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together vegetable oil, buttermilk, eggs, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients and mix until the batter is smooth.
  5. Stir in the boiling water carefully, creating a thinner batter.
  6. Fill the cupcake liners about two-thirds full with the batter.
  7. Bake for 18-20 minutes, checking with a toothpick for doneness.
  8. Let the cupcakes cool in the tin for 5-10 minutes, then transfer to a wire rack to cool completely.
  9. Frost the cooled cupcakes with chocolate frosting and top with mini marshmallows.
  10. Serve and enjoy!
