2 cups cooked shredded chicken
1 tablespoon olive oil
1 medium onion, diced
2 carrots, diced
1 cup frozen peas
4 cups chicken broth
1 cup milk (or heavy cream)
1 teaspoon thyme
Salt and pepper to taste
