1 lb boneless, skinless chicken breasts
1 cup potatoes, diced
1 package (16 oz) gnocchi
4 cups chicken broth
1 cup heavy cream
1 cup spinach, chopped
1 tsp garlic, minced
Salt & pepper to taste
In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced chicken and cook until no longer pink, about 5-7 minutes. Season with salt, pepper, and minced garlic.
Add the diced potatoes (or your chosen substitute) and cook for an additional 2-3 minutes.
Carefully pour in the chicken broth and bring the mixture to a boil. Reduce heat and simmer for about 10 minutes until the potatoes are tender.
Gently add the gnocchi to the pot, cooking them according to the package instructions—usually around 2-3 minutes.
Slowly stir in the heavy cream or your chosen alternative, mixing well until combined. Bring the soup back to a gentle simmer.
Fold in the chopped spinach and allow it to wilt before removing the pot from heat.
Ladle the soup into bowls and garnish with fresh herbs or a sprinkle of cheese if desired.
