  • 4 cups chicken or vegetable broth
  • 2 cups chopped vegetables (carrots, celery, bell peppers)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • Instructions

  • In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3–4 minutes.
  • Add the minced garlic and ginger to the pot, cooking for another minute until fragrant.
  • Next, add in your chopped vegetables. Stir them together with the onion, garlic, and ginger for about 5 minutes until they begin to soften.
  • Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let simmer for 10 minutes.
  • Add the shredded chicken and season with salt and pepper. Allow the soup to simmer for an additional 5-10 minutes.
  • Before serving, taste and adjust the seasoning as necessary.
  • Serve hot, garnished with fresh herbs like parsley or a squeeze of lemon juice.
