Cheesy Mexican Meatballs

A delightful blend of ground beef and cheese with vibrant Mexican spices, perfect for family dinners or gatherings.

  • 1 lb Ground Beef (or ground turkey for a lighter option)
  • 1/2 cup Oats (can be substituted with breadcrumbs or almond flour)
  • 1 large Egg (binds the meat mixture)
  • 2 cups Red Enchilada Sauce (mild or spicy based on preference)
  • to taste Seasonings (salt, onion powder, garlic powder, pepper, oregano, cumin, chili powder)
  • to taste Hot Sauce (optional)
  • 2 cups Cheese (cheddar, Monterey Jack, or pepper jack)
  • to taste Cilantro (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef (or turkey), oats, and egg. Mix until well combined.
  3. Sprinkle in the chosen seasonings and mix again.
  4. Gently fold in 1 cup of shredded cheese.
  5. Shape the mixture into 1 to 2-inch meatballs and place them on a lined baking sheet.
  6. Pour the enchilada sauce over the meatballs.
  7. Bake for 20-25 minutes until no longer pink in the center and the internal temperature reaches 160°F (71°C).
  8. Sprinkle the remaining cheese over the meatballs and return to the oven for an additional 5 minutes until melted.
  9. Garnish with fresh cilantro before serving.

Notes

Avoid overmixing to keep meatballs tender. Feel free to adjust spices and experiment with different types of cheese.
