8 large shrimp, peeled and deveined
1/4 cup garlic butter
4 slices of bread
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 tbsp fresh parsley, chopped
1 tbsp olive oil
Salt and pepper to taste
Pinch of red pepper flakes (optional)
Instructions
Prepare the shrimp by rinsing them under cold water and patting them dry. Melt garlic butter in a skillet over medium heat and cook shrimp for 2-3 minutes on each side until pink and opaque. Set aside.
Spread garlic butter generously on one side of each bread slice and sprinkle with fresh parsley.
Assemble the sandwich by layering half the cheese on one slice, adding the shrimp, topping with the remaining cheese, and placing another slice of buttered bread on top.
Heat a skillet over medium heat, add olive oil, and grill the sandwiches until golden brown and crispy, about 3-4 minutes per side.
Remove from skillet, let cool slightly, slice in half, and garnish with chopped parsley before serving.
