  • 1 medium head Cauliflower (chopped)
  • 2 cups Kale (chopped)
  • 1 Onion (diced)
  • 4 cloves Garlic (minced)
  • 6 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • Salt & Pepper to taste
  • Optional Red Pepper Flakes

  • In a large pot, heat the olive oil over medium heat. Add the sausage, breaking it into bite-sized pieces, and cook until browned (about 5-7 minutes).
  • Once the sausage is browned, add the diced onion and minced garlic. Sauté for another 3-4 minutes until the onion becomes translucent.
  • Stir in the chopped cauliflower and kale, and cook for another 2 minutes, allowing the flavors to meld.
