1 pound Italian or Chicken Sausage
1 medium head Cauliflower (chopped)
2 cups Kale (chopped)
1 Onion (diced)
4 cloves Garlic (minced)
6 cups Vegetable Broth
2 tablespoons Olive Oil
Salt & Pepper to taste
Optional Red Pepper Flakes
In a large pot, heat the olive oil over medium heat. Add the sausage, breaking it into bite-sized pieces, and cook until browned (about 5-7 minutes).
Once the sausage is browned, add the diced onion and minced garlic. Sauté for another 3-4 minutes until the onion becomes translucent.
Stir in the chopped cauliflower and kale, and cook for another 2 minutes, allowing the flavors to meld.
Add the vegetable broth and bring the mixture to a boil. Then reduce to a simmer and allow it to cook for about 15-20 minutes or until the cauliflower is tender.
Taste the soup and season with salt, pepper, and red pepper flakes (if using) to your preference.
Ladle the soup into bowls and top with optional add-ons like shredded cheese or a splash of cream if desired. Enjoy your hearty meal!
