Cannoli Cupcakes

Delicious cupcakes inspired by the classic Italian dessert, cannoli, featuring rich chocolate cake and creamy mascarpone frosting.

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • Confectioners’ sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a cupcake pan with paper liners.
  3. In a mixing bowl, combine the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together.
  4. In another bowl, beat the softened butter until smooth and creamy.
  5. Add eggs and vanilla to the butter, mixing until combined.
  6. Gradually incorporate the dry ingredients into the wet mixture. Mix until just combined.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let the cupcakes cool in the tray for 10 minutes, then transfer to a wire rack to cool completely.
  10. Prepare the frosting by beating mascarpone cheese and heavy cream together until soft peaks form.
  11. Add powdered sugar gradually, beating until stiff peaks form.
  12. Frost the cooled cupcakes generously with the mascarpone mixture.
  13. Sprinkle mini chocolate chips on top.
  14. Dust with confectioners’ sugar before serving.

Notes

For a unique twist, consider adding lemon zest to the frosting or incorporating crushed pistachios on top.
