Broccoli Cheddar Stuffed Chicken Breast

A delicious and nutritious dinner option featuring tender chicken breasts stuffed with a creamy broccoli and cheddar filling, spiced with Cajun seasoning.

  • 4 pieces Chicken Breasts (Thick-cut, boneless, skinless)
  • 1 cup Broccoli (Fresh or frozen, chopped)
  • 4 oz Cream Cheese (Consider Neufchâtel for lighter option)
  • 1 cup Cheddar Cheese (Sharp cheddar recommended)
  • 1 tbsp Cajun Seasoning (Adjust for milder taste)
  • ½ tsp Salt (For seasoning)
  • 2 tbsp Olive Oil (Melted butter can be a substitute)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh broccoli, steam or microwave it until tender. If using frozen broccoli, follow the package instructions.
  3. In a mixing bowl, combine chopped broccoli, cream cheese, shredded cheddar cheese, Cajun seasoning, and salt. Mix until well blended.
  4. Make a pocket in each chicken breast with a sharp knife.
  5. Spoon the broccoli and cheese mixture into the pocket of each chicken breast and secure with toothpicks.
  6. Brush the outside of each stuffed chicken breast with olive oil and season with additional Cajun seasoning.
  7. Bake in the preheated oven for 25 – 30 minutes until the internal temperature reaches 165°F (75°C).
  8. Let rest for a few minutes before serving.

Notes

You can serve the chicken with rice, quinoa, roasted vegetables, or a fresh salad for a complete meal.
