Blueberry Swirl Sugar Cookies

Delightful sugar cookies swirled with sweet blueberry jam, perfect for any occasion.

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberry jam (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the large egg and vanilla extract, mixing until smooth and well blended.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes.
  7. Flour your working surface and roll the chilled dough into a rectangle about 1/4 inch thick.
  8. Spread the blueberry jam evenly over the rolled-out dough.
  9. Starting from one end, roll the dough into a log and slice into 1/2-inch thick rounds.
  10. Arrange cookies on the prepared baking sheet and bake for 12-15 minutes until golden at the edges.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve with powdered sugar dusting or a scoop of vanilla ice cream for an extra treat.
