Best Ground Beef and Sweet Potatoes Skillet

A delicious one-pot meal featuring ground beef, sweet potatoes, and various flavorful ingredients.

  • 1 pound ground beef
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed (approximately 2 medium-sized potatoes)
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, diced
  • 1 cup shredded cheese (optional)
  • Fresh cilantro, avocado slices, and sour cream for serving

Instructions

  1. Prep your ingredients by dicing onion, mincing garlic, cubing sweet potatoes, and dicing poblano pepper.
  2. In a large skillet, heat a little oil over medium-high heat, add ground beef, and cook until browned, breaking it into small pieces (5 to 7 minutes).
  3. Add diced onion and minced garlic, cooking for another 2-3 minutes until onion is translucent.
  4. Sprinkle in taco seasoning and stir to combine evenly.
  5. Add cubed sweet potatoes and water, stirring together, and cover to simmer for 15-20 minutes until tender.
  6. Add frozen corn and diced poblano pepper, cooking for an additional 5-7 minutes until heated through.
  7. If using cheese, sprinkle on top during the last couple of minutes of cooking to melt.
  8. Garnish with fresh cilantro, avocado slices, and a dollop of sour cream before serving.

Notes

This dish can be refrigerated for 3-4 days or frozen for up to 3 months. Adjust spice levels based on your preference.
