Gingerbread Cheesecake Cookies

Delicious cookies combining the spiced flavors of gingerbread with a creamy cheesecake filling, perfect for holiday celebrations.

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, cream the unsalted butter with the brown sugar until light and fluffy. Add the egg and molasses, mixing to combine.
  2. In another bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Gradually incorporate into the wet mixture without overmixing.
  3. Cover and refrigerate the dough for at least 1 hour.
  4. Beat the cream cheese until smooth, then mix in powdered sugar and vanilla.
  5. Preheat oven to 350°F (175°C) and prepare baking sheets.
  6. Form dough balls, create an indent in each, and fill with cheesecake mixture.
  7. Bake for 10-12 minutes until edges are golden. Cool before serving.

Notes

These cookies can be served warm or at room temperature. Dust with powdered sugar for a festive touch.
