Best Ever Ground Beef Orzo

A comforting one-pot meal that combines hearty ground beef, tender orzo pasta, and fresh vegetables, perfect for busy weeknights.

  • 1 pound Lean Ground Beef (or ground turkey/chicken)
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Orzo Pasta (or other small pasta)
  • 14.5 ounces Canned Diced Tomatoes
  • 2 cups Low-Sodium Beef Broth (or vegetable broth)
  • 1 tablespoon Italian Seasoning
  • 2 cups Fresh Spinach (or other greens)

Instructions

  1. In a large pot or skillet, over medium heat, add the lean ground beef. Break it up with a spatula and cook until browned (5-7 minutes).
  2. Add the finely chopped onion. Cook for about 3 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Pour in the diced tomatoes and beef broth. Add the orzo and Italian seasoning. Stir well.
  4. Bring to a gentle simmer, cover, and cook for about 10-12 minutes, stirring occasionally.
  5. When orzo is al dente, add the spinach and stir until wilted (1-2 minutes).
  6. Give a final stir, season to taste, and serve hot!

Notes

Serve with grated Parmesan cheese for extra flavor. Store leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze for 2-3 months.
