1 lb. uncooked shrimp
1 teaspoon Cajun seasoning
1 red bell pepper, diced
1 tablespoon olive oil
3 tablespoons butter
3 cloves garlic, minced
3 tablespoons flour
1.5 cups chicken broth
0.75 cups heavy cream
1 tablespoon honey
2 teaspoons hot sauce
10 oz. Rotel diced tomatoes with green chilies
0.75 cups cheddar jack cheese, shredded
2 teaspoons lime juice
Instructions
Prep the shrimp: Thaw and clean the shrimp; pat dry with paper towels.
Season the shrimp: Mix with Cajun seasoning and set aside.
Sauté the veggies: Heat olive oil in a skillet, add red bell pepper, and sauté for 2-3 minutes. Add garlic and sauté for another minute.
Cook the shrimp: Add seasoned shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque; set aside.
Make the sauce: In the same skillet, melt butter, then whisk in flour and cook for 1 minute. Gradually add chicken broth, whisking until smooth and thickened.
Stir in cream and remaining ingredients: Lower heat, mix in heavy cream, honey, hot sauce, diced tomatoes, and salt; combine well.
Add cheese and lime juice: Mix in cheese and lime juice until melted and creamy; adjust seasoning as needed.
Combine everything: Return shrimp and bell pepper to the skillet, stir well, and heat through for an additional minute.
