Bananas Foster with Pecans & Caramel

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup pecans, chopped
  • 1 teaspoon vanilla extract
  • 1/4 cup dark rum (optional)
  • Ice cream (for serving)

Instructions

  1. Melt the butter in a large skillet over medium heat, ensuring it doesn’t brown.
  2. Add the brown sugar and stir until completely dissolved, creating a caramel base.
  3. Slice the bananas into thick pieces.
  4. Carefully add the bananas to the skillet and cook for 2 to 3 minutes, gently stirring until caramelized.
  5. Stir in the chopped pecans and vanilla extract.
  6. If desired, add dark rum and flambé carefully to burn off alcohol.
  7. Lower the heat and let the mixture simmer for 1-2 minutes.
  8. Serve the warm banana mixture over scoops of ice cream.
