Banana Bread Cinnamon Rolls

Delightful combination of banana bread and cinnamon rolls, perfect for breakfast or dessert.

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk, warmed to about 110°F
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 2 large eggs
  • 4 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 1/2 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 4 oz cream cheese, softened (for icing)
  • 1/4 cup unsalted butter, softened (for icing)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Activate the yeast by combining warm milk and sugar, sprinkling yeast over and letting it sit until foamy.
  2. Mix mashed bananas, melted butter, yeast mixture, and eggs in a large bowl. Gradually add flour and salt, mixing and kneading until smooth.
  3. Let the dough rise in a greased bowl, covered, for about 1 hour or until doubled in size.
  4. Prepare the filling by mixing softened butter, brown sugar, and cinnamon until smooth.
  5. Roll out the dough into a rectangle on a floured surface.
  6. Spread the cinnamon filling over the dough and roll it up tightly, sealing the edges.
  7. Slice rolled dough into about 12 pieces and place cut-side up in a greased baking dish.
  8. Let rolls rise, covered, for another 30 minutes.
  9. Bake in a preheated oven at 350°F for 25-30 minutes until golden brown.
  10. Prepare icing by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
  11. Let rolls cool for a few minutes, then drizzle the icing over and serve warm.

Notes

Serve warm with optional toppings like fresh fruit or chopped nuts.
