  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (e.g., rosemary or thyme) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the fingerling potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. On a large baking sheet, smash each potato gently with the bottom of a glass or fork.
  5. In a small saucepan, melt the butter with the minced garlic, then pour over the smashed potatoes, and drizzle with olive oil. Season with salt and pepper.
